This decaf Mountain Water Process coffee was grown by roughly 400 small-holder farmers in the Jaen and Cajamarca regions of Peru. The Lima Coffees Exporting Organization then organizes these harvests and has them shipped to a decaffeination plant in Mexico, called Descamex. Here the seeds are soaked in a natural solution which removes the caffeine and other solubles like flavor molecules and color from the coffee. The caffeine is then removed using special filters, and the rest of the solubles are then introduced back into the seeds. Totally natural and delicious alternative to caffeinated coffee.
