About the Coffee
Chalatenango is the name of a department in northern El Salvador that contains part of a protected biosphere preserve called Montecristo Triunfo. Montecristo Triunfo is a tri-border national park and nature preserve that lies between three countries, El Salvador, Honduras, and Guatemala. Here you can hike up into a cloud forest at the highest point in the park, El Triunfo, where the three countries intersect! Coffee is grown here by smallholder farmers on small plots of land at high elevations between 1500 and 1800 MASL. The earth is very steep and hard to access here and most of the coffee is grown by farmers on smaller plots of land because of it. This coffee is fully washed with a long 30 hour fermentation process that brings out some nice sweet flavors!
