About the Coffee
This organic certified coffee comes from the town of San Martin Jilotepeque in the Chimaltenango region of Guatemala. About 45 smallholder farmers here work within the Flor de Café cooperative to cultivate organic coffees. By obtaining their organic certification they earn a higher premium for their ripe cherries, and they use those earnings to fund community projects, do farm renovations, as well as build new processing infrastructure. Coffee on these farms is grown in the shade of native fruit trees, such as bananas and jocote. They also use living plant barriers to help prevent soil erosion, which also helps feed their goats. This coffee is fully washed on each producer's own farm and then laid out on patios to dry in the sun.
