About the Coffee
This fresh arrival from the Wahgi Valley in the Western Highlands Province of Papua New Guinea is a fully washed, peaberry grade coffee grown at elevations at or above 1,500 MASL. The producers here use a very selective picking technique and implement a thorough fermentation process: Three days of soaking with a wash once every 24 hours, followed by another day of soaking to balance the taste. The clean cherries are then sun-dried on raised beds and lastly they go through a de-stoning and sorting process by hand. All that hard work really shows in the final product.
