Brazil Topázio
This coffee comes from Sebastião Curimbaba of Fazenda Chapadão, a family-run farm that is focused on quality of specialty coffee lots, innovative processing, and investing in the education and futures of their team members. This new release, Brazil Topázio, is named after the coffee variety. The name Chapadão is in reference to the area where the farm is located, on a high elevation plateau which receives ample sunlight and while keeping temperatures cool because of the elevation. These factors together make this site an ideal location for growing coffee. Sebastião and his father bought this farm many years ago after realizing its coffee growing potential and in 2016, they started their specialty coffee program. The quality of coffee lots from this farm quickly stood out from the surrounding region.
Processing
This lot is made up of the Topázio variety, which is a cross between two popular varieties commonly grown in Brazil – red catuai and mundo novo (which is itself a cross between the varieties bourbon and typica). This coffee is processed naturally, being laid out to dry on large patios with the coffee fruit still intact, see photo below for large patio reference, and results in a very silky-smooth body with unique flavors.
In the Cup
These naturally processed Brazilian coffees are well known for having smooth clean finishes with nice, sweet flavors. We are finding tasting notes of apricot, almond, golden raisin, and cocoa, but I'm sure that is not all! Classic Brazilian coffee flavors fall into line with some citrus and sweet notes that you don't always find, a lovely easy drinking coffee with a bright finish.
