About the Coffee
This fair trade and organic certified coffee comes from the Aceh Province on the northern tip of the island of Sumatra. The Arisarina cooperative is made up of growers that live in and around the town of Takengon, and cultivate their coffees at elevations between 1,400 - 1,700 MASL. Sumatran coffee has a very distinct earthy and mild flavor that lends itself to the method of which it was processed -- the wet-hulled method. The weather on the island of Sumatra is humid and rainy, which makes it very difficult to dry coffee. To prevent mold, the wet-hulled process is used to help these coffees get down to a stable water moisture level, by removing the parchment on the coffee while it is still somewhat wet to be able to dry faster. This adds some of that earthy, mild flavor to the coffee that works so well as a dark roast. We've had Sumatran coffee on the menu for as long as we can remember, and we'll keep the tradition alive with this lovely coffee.

Our coffee is roasted on two S35 Kestrel Loring Smart Roasters. Up to 80% fuel-savings and reduction of greenhouse gases in every roast, compared to conventional roasters.
