About the Coffee
Jesus Sabillon is a coffee grower and farmer that our collective partners from Kansas City have worked with over the past few years. Jesus grows mainly a newer variety of coffee called Parainema, a coffee leaf-resistant variety that was developed in Honduras to maintain quality and high yields, while being resistant to coffee leaf rust, a fungus that decimated the coffee crop in Honduras during an outbreak in 2012. Jesus' farm is called El Pepenance and is located in the village of El Higueral, in the Santa Barbara department of Honduras. Santa Barbara is on the western side of the country that shares a border with Guatemala. Jesus is a third-generation coffee farmer and remembers helping his father with picking and sorting coffee cherries as early as age 10. Today, Jesus' son has his own farm, continuing the family legacy into a fourth generation.Â

Our coffee is roasted on two S35 Kestrel Loring Smart Roasters. Up to 80% fuel-savings and reduction of greenhouse gases in every roast, compared to conventional roasters.
