About the Coffee
Elkin Guzman is the producer and owner of Finca Mirador, a family-owned coffee farm located in Huila, Colombia. Elkin grew up around coffee, and his family has been involved in coffee growing for over 70 years! He has been involved in many years of research on post-harvest processing methods. This will be the first time Anodyne has an orange bourbon variety on our shelves, a natural mutation of the red bourbon, and is known for its citrus like notes and high quality. 
 
Processing
These cherries are picked during the morning hours, when the concentration of sugars are at their highest, this is due to the coffee plants reduced stress in the cooler temperatures. The hydro-honey natural process begins by floating the coffee cherries in water to remove defects and followed by hand-sorting to remove defects. Cherries are then dried and fermented for eight days – this is essentially a natural process. Here's where things take a turn. The dried cherries are then placed in water tanks for 36 hours. Inside the water tanks, the cherries are rehydrated, and the sugars are broken down. The coffee is then pulped and moved to raised beds where the coffee will dry for 20 - 25 days. This experimental technique aims to be sustainable by reducing water usage, saving some capital and allowing producers access to new markets.
