About the Coffee
Up until fairly recently, the pink bourbon coffee variety was thought to be a hybrid of red and yellow bourbon coffee varieties. After much research and investigation done by the sensory team at Minneapolis based coffee importer Cafe Imports, pink bourbon isn't a bourbon coffee variety at all, but rather a Ethiopian landrace variety that found its way to Colombia! Very cool.
This coffee was processed using an experimental method that the experts at Monteblanco have perfected after a few years of trial and error. This method, which they call cold fermentation, begins with the cherries being pulped and placed in a cold room with the coffee mucilage intact to extend the fermentation process. This has proven to develop some very interesting and unique flavors. Finca Monteblanco is a progressive coffee farm located in the Huila department of Colombia, and is managed by Rodrigo Sanchez, a third generation coffee farmer carrying on the family legacy that was started by his grandfather.
