Ángeles
Owner of Finca Los Ángeles Oscar and Francisca Chacón developed their own style and processed some of the first honey and natural processed coffees to come out of Costa Rica. Founded in 2005, and due to an earthquake and loss of power in 2008, creativity came into play and the couple started utilizing African-style raised beds to dry their coffees. This led to the development of their own unique style of processing which created unique flavor profiles. Finca Los Angeles is located in Sabanilla de Alajuela, central valley region of Costa Rica. This area is a bit northwest of San José, right in the heart of the country, where the farm grows common Costa Rican varieties like caturra and catuai in high elevations between 1,400 and 1,600 MASL. Overall great location for coffee production. 

Processing
This coffee was processed in what the Chacón's call a perla negra natural process. The coffee cherries are picked while at their ripest, bursting with fruity, sugary goodness, and are then moved to raised beds to be dried in the sunshine. After a week of being rotated and turned over in the sun, the coffee cherries get moved into the shade to continue to dry, but at a slower pace. This slow and meticulous drying style allows the coffee ample time to absorb those sweet flavors and transform into a very sweet coffee. This is essentially a natural process with some extra care taking place to really lock in those sugars.

In the Cup
From the first sip, the sweet and juicy nature of this coffee takes hold on your palate. Cranberry, tangerine, caramel, banana, and fruit punch notes are the first thing that comes to mind, but over time you can expect more notes to emerge. This is one of those extremely well-done and clean naturals that is going to open up weeks after roast, releasing more exciting flavors. Enjoy.
