About the Coffee
This decaf mountain water process coffee comes from farmers all over the Chiapas region of Mexico. The CABONACH cooperative works together to grow coffees with classic coffee profiles and they hold an organic certification as well. The beans are fully washed per usual, but then soaked in a water solution that removes caffeine as well as other molecules in the coffees. The caffeine is then removed from the solution, and the beans are reintroduced to the caffeine free solution, creating a nice crisp cup.

How is your coffee roasted?
Our coffee is roasted on two S35 Kestrel Loring Smart Roasters. Up to 80% fuel-savings and reduction of greenhouse gases in every roast, compared to conventional roasters.
