About the Coffee
In a unique process, a blend of cherry ripeness is precisely selected: 85% well-ripe, 10% ripe, and 5% overripe cherries. The cherries are then immersed in water tanks for an intensive floater removal process, ensuring only the densest, highest-quality cherries are selected. The cherries are then dried on raised African beds under a shade net for a period of about 21 days. This controlled drying environment allows for slow, even drying, preserving delicate aromatics and sugars. The meticulous processing yields a coffee with a remarkable profile, floral jasmine with notes of green apple citrus, apricot sweetness, and chocolate milk finish.
