About the Coffee
At just under 30 years of age, Jocsan Mendoza is a young and talented coffee grower who learned first-hand from his father about coffee farming. We've roasted coffee from Jocsan a few years back, and his natural processed coffees have been some of our absolute favorites in recent memory.
Processing
These coffee cherries were first floated in water to find any defects, dense solid cherries sink, defects float and are sorted out. The coffee is then transferred to raised beds to be dried for an average of about 20 days to slowly and evenly dry, all the while being hand sorted to remove any defects.

Our coffee is roasted on two S35 Kestrel Loring Smart Roasters. Up to 80% fuel-savings and reduction of greenhouse gases in every roast, compared to conventional roasters.
