Maria Isabel Reyes is the owner of Finca El Guayabal, a 1.23-hectare coffee farm located in the Santa Barbara department of Honduras. Maria grew up helping her father around their family farm, growing corn, beans, sugar cane, and they also raised livestock. Her family moved to El Cedral when she was around 12 years old, and there she learned all about coffee growing from her coffee producing grandfather. Jump ahead to 2009, Maria is married, and along with her husband they decide to start growing specialty coffee. Maria's husband worked in the US for a few years to save up some money, and eventually they were able to acquire another farm they named El Guayabal. There in 2019, Maria started growing coffee in her own name separately from her husband's, officially becoming a coffee producer. Maria and her husband still work together as a team though to produce these lovely specialty lots. Â

Processing
This fully washed lot goes through strict processing to ensure that only clean and desired flavors end up in your cup. On the farm they de-pulp cherries every afternoon, the coffee is then fermented while still inside the parchment to loosen up the mucilage, then rinsed multiple times to remove that sticky outer mucilage layer, it is then sorted by hand to remove any defective beans, and finally laid out to dry inside a greenhouse-like solar dryer for around 20 days.Â

Tasting notes that we are finding for this one are classic Honduras: hazelnut, cinnamon, cocoa, graham, fig, honey, cranberry, and some nice tangerine like citrus.Â
