About the Coffee
This is our first time ever roasting a coffee from the Puebla region of Mexico. A much lesser-known coffee growing area than Chiapas or Oaxaca, Puebla offers some very interesting profiles from smallholder producers, growing coffees on small plots of land, tucked up in high elevations in the mountains.
Margarita Cabrera grew up in the coffee business, helping her family with pruning, planting shade trees, and maintaining soil health. Margarita's farm is named 'Ocotzalan' which in the indigenous Nahuatl language is a reference to a poplar pine tree that thrives in the area. Many people with indigenous heritage made their homes here in the coffee growing mountainous areas after retreating from Spanish colonists, and their decedents still live and farm in these areas today. Maria takes meticulous care of the washing station, cleaning pulpers and fermentation tanks after every batch of coffee that passes through, and this care shows with the super clean and well-balanced profile of her coffee.Â
