Myanmar Kyauk Ku Pyin
Kyauk Ku Pyin is the name of one of the communities that makes up the Shwe Thaung Thu group, a community of 400 farmers (60% women) from 18 different villages in Myanmar that have organized together around coffee growing. Shwe Thaung Thu translates to "golden farmer" in Burmese, and in this part of the Shan State of Myanmar coffee producing is evolving quickly! Over the past ten years, they have gone from hardly producing any specialty coffee at all, to producing high quality washed and natural lots! These coffees are some of our favorite profiles, especially the naturally processed coffees. The weather in the part of Myanmar is cool and dry, perfect for evenly drying coffee still intact inside the coffee fruit producing very balanced coffees. We bought our first lot from Myanmar back in 2016, almost 10 years later we are still as giddy as ever to have one of these offerings on our shelves!
Processing
This coffee is picked when perfectly ripe and meticulously sorted so that no defects make it through to the final lot. It was processed naturally, which means it was left to dry on raised beds while still inside the coffee fruit, imparting the sweet flavor of the fruit into the coffee seeds. After being evenly dried, the fleshy fruit is then removed, and the clean coffee cherries are then ready for export.
