About the Coffee
This is our second year in a row roasting a coffee that was processed at the Kilimbi washing station. Kilimbi was constructed in 2016 in Rwanda's Nyamasheke district, an area with a large volume of coffee producers, and is situated right on the shores of Lake Kivu. Coffee growers deliver their coffee cherries to the Kilimbi station from all over the Nyamasheke region, some even deliver their coffee cherries over Lake Kivu by boat. 
 
Lake Kivu is one of only three lakes in the world that undergoes limnic eruptions, where layers in the water column can overturn, releasing carbon dioxide that reacts with high levels of methane found below the water's surface. This deep freshwater lake is a bit of a sleeping giant, with potential to produce a very dangerous situation. Geologists have found extinction events in the fossil layer, and they predict that a limnic eruption could turn over the dangerous dissolved gasses in the water column producing a cloud of toxic gas or an explosion. All of this volcanic activity in this area helped produce these rich and fertile volcanic soils, which in turn produces the bright acidity and flavor profiles that we love in these coffees. This year we've purchased just a few bags of a honey processed coffee from Rwandan based exporter, Higa Coffee, and are very excited to have it on the offerings list! 
 
Processing
This coffee was processed as a honey processed coffee, where the coffee is pulped of its fleshy outer layer before being left to dry with some of the sweet mucilage still intact. This coffee is then floated to check for density differences, and then sorted by hand to make sure only the ripest cherries make it through processing.
